Ingredients for 4 servings:
- 500 g asparagus, green
- 3 eggs
- 1 ½ dl mascarpone
- 2 tbsp butter
- 2 tbsp honey
- salt and pepper
- 1 sheet(s) of puff pastry
- 1 shot of white wine
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Cook the asparagus in a little water with a generous splash of white wine for about 12 minutes. Let it cool, then cut off approximately 10cm long pieces from the tips. Puree the remaining ends, mix with 3 eggs and the mascarpone, and season with salt and pepper. Lightly butter a 24cm pie dish, line it with the puff pastry, and fill it with the asparagus mixture. Arrange the asparagus spears in a star shape on top of the mixture. Mix the butter and honey together and brush the asparagus spears with it. Bake in the preheated oven for 20-25 minutes.
