Green asparagus salad

Ingredients for 2 servings:

  • 500 g asparagus
  • 2 eggs
  • 1 spring onion(s)
  • 2 tbsp parsley or chives
  • 1 baguette(s)
  • 4 tbsp vinegar
  • 2 tbsp olive oil
  • Salt and pepper, freshly ground
  • 1 pinch(s) of sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the asparagus and cook in salted water with a pinch of sugar until al dente. Meanwhile, mix a vinaigrette with vinegar, olive oil, pepper, and salt. Finely dice the hard-boiled eggs and slice the spring onions into small rings. Arrange the warm asparagus on plates and drizzle with the vinaigrette. Add the diced eggs and spring onions and sprinkle with finely chopped chives or parsley. Serve with a slice of fresh baguette.
