Warm asparagus salad with avocado

Ingredients for 2 servings:

  • 500 g asparagus
  • 1 avocado(s), not too ripe
  • 1 egg(s)
  • Vinegar (Melfor)
  • Salt
  • pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the asparagus and avocado. Cook the asparagus in salted water for about 8-10 minutes. At the same time, chop the avocado into small pieces and fry it in a little olive oil for 3-4 minutes. Cook the egg for 3-4 minutes, until it is still soft. Cut the cooked asparagus into small pieces, mix with the fried avocado and egg yolk. Season with a little vinegar, salt, pepper, and olive oil. Dice the egg white and add it to the salad.
