Green asparagus with Gorgonzola sauce

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 1 tbsp butter , (1)
  • 50 g butter , (2)
  • 2 slices of white bread
  • 2 tbsp lemon juice
  • 150g Gorgonzola
  • 2 dl cream (full cream)
  • ½ bunch parsley, finely chopped
  • 2 tbsp chives, finely chopped
  • 1 tbsp sugar
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Asparagus with Gorgonzola

Wash and peel the asparagus, being careful not to break it. Place the asparagus in a large pot with salted water, lemon juice, sugar, butter (1) and the 2 slices of bread, bring to a boil and cook until al dente. (The bread will absorb some of the bitterness from the asparagus). Drain the asparagus and place in a buttered gratin dish. While the asparagus is cooking, melt the butter (2) in a small pan, crumble in the Gorgonzola and stir until melted. Add the cream, simmer gently for 1 minute, season with salt, pepper and herbs. Pour the mixture over the asparagus and place in an oven preheated to 200°C for 4-5 minutes.
