Ingredients for 10 servings:
- 3 large eggs
- 100 g flour
- 1 tbsp parsley, finely chopped
- 1 tbsp chives, finely chopped
- 80 g ham, very finely sliced
- 1 small shallot(s), very finely chopped
- some salt and pepper
Instructions

Separate the eggs and beat the egg whites until stiff peaks form. Carefully stir the three egg yolks and the flour into the mixture. Add salt, pepper, herbs, shallot, and ham, and mix gently. Spread the mixture onto a baking sheet lined with baking paper, about a finger’s thickness, and bake in an oven preheated to 220 degrees Celsius for 8 minutes. Remove from the oven, let cool, and then remove from the baking sheet. Cut into diamond shapes or cubes, and heat in broth if using. Root vegetables can also be used instead of ham.
