Spinach salad with mozzarella

Ingredients for 4 servings:

  • 200 g fresh leaf spinach
  • ½ head of frisée lettuce
  • 6 m.-large tomato(s)
  • 125g mozzarella
  • 5 tbsp balsamic vinegar
  • 5 tbsp olive oil
  • 1 tsp mustard
  • 1 tsp honey
  • 1 clove(s) garlic, crushed
  • Salt and pepper, freshly ground
  • 50 g sunflower seeds
  • ½ bunch basil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Sort the spinach, wash thoroughly, and pat dry. Trim the frisee and tear into bite-sized pieces. Rinse the tomatoes, quarter them, and remove the stems. Arrange everything on plates. Mix the sauce ingredients. Roast the sunflower seeds in a nonstick Teflon pan without fat. Pour the sauce, sunflower seeds, and basil leaves over the salad and serve immediately.
