Green asparagus with wild garlic, tomatoes, olives and feta

Ingredients for 1 servings:

  • 150 g asparagus, green, washed and woody ends removed
  • 150 g cocktail tomatoes, washed and quartered
  • 3 tbsp black olives, pitted, cut into rings
  • 75 g feta cheese, cut into thin slices
  • 1 small piece(s) of butter
  • 2 handfuls of wild garlic leaves, washed and cut into fine strips
  • some pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Simple, quick and healthy

Place the green asparagus in a baking dish, covering the bottom. Arrange the quartered tomatoes and olive rings on top. Melt the butter in a small saucepan and sauté the wild garlic for 3-4 minutes, stirring occasionally. Arrange the wild garlic leaves on top of the asparagus. Season with pepper and finally spread the feta over the vegetables. Bake in the oven at 220°C for 20 minutes. If desired, you can use the grill function for the last 5 minutes to brown the feta slightly. Serve with salad and some couscous.
