Green beans and peas with ginger

Ingredients for 4 servings:

  • 200 ml water
  • ½ tsp salt
  • 3 tbsp coriander greens, chopped
  • 500 g beans, green
  • 200 g peas, fresh or frozen
  • 1 tbsp ginger, finely grated
  • ½ chili pepper(s), green, very finely diced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

perfect with a curry

Bring salted water to a boil. Add the beans (cut into 1 cm pieces) and peas and bring back to a boil. Cover and simmer until the beans are tender. Adjust the heat so that at the end of the cooking time, there are about 2-3 tablespoons of water left in the pan; the rest should have evaporated (unfortunately, I can’t give you an exact time, as I’ve never cooked it on an electric stove, only an Aga). Stir in the coriander, ginger, and chili, and cook uncovered over high heat for 1 minute.
