Green beans with beef and tomato sauce

Ingredients for 4 servings:

  • 1 kg beans, green
  • 1 kg tomatoes
  • ½ kg beef
  • 1 vegetable onion(s)
  • 3 garlic cloves
  • 1 class can/n Tomato paste, (approx. 3 tbsp)
  • ½ bunch parsley, flat
  • some olive oil
  • some salt and pepper
  • some paprika powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Classics from Greece (from my dad)

Peel, deseed, and roughly dice the tomatoes. Dice the onion and chop the garlic. Clean and trim the beans, halving them if necessary. Dice the beef and brown it well on all sides in olive oil over high heat. Add the onions and continue to cook, finally adding the chopped garlic. Add the tomatoes and beans, pour in 1 glass of water (approx. 0.2 l), and simmer over low heat. Add the tomato paste and season. Stir occasionally and simmer for about 1 hour, until the beans are tender (this time can vary greatly). Meanwhile, chop the parsley. When the beans are done, stir in the parsley and season with paprika, if desired. Serve with fresh tzatziki and bread, and perhaps baked potatoes.
