Ingredients for 2 servings:

  • 1 can of beans (green beans)
  • 3 eggs
  • 2 ½ tbsp breadcrumbs
  • 4 tbsp butter
  • Salt and pepper, black

Drain the beans well in a colander. Melt two tablespoons of butter in a pan over high heat and add the beans. Season with salt, pepper, and a good amount of savory (I always use at least 3 tablespoons—I love the taste). Stir occasionally, but keep the heat on full. The beans should brown slightly, not boil! In another pan, brown the breadcrumbs well with two tablespoons of butter. Then stir in the beans, toss well, and season with salt and pepper. Finally, add the eggs and stir everything well until the eggs are cooked. Don’t overcook them; the egg will lose its flavor if it’s too dry. This is actually enough as a main course, but it also makes a nice side dish, for example, for homemade meatballs/frikadellen.
