Green beans with tomatoes

Ingredients for 6 servings:

  • 500 g beans, green
  • 1 can of tomatoes
  • 2 tbsp olive oil
  • 1 onion(s), chopped
  • 2 garlic cloves, crushed
  • 2 tbsp sugar
  • 2 tbsp vinegar (red wine vinegar)
  • 1 tsp basil, fresh, chopped
  • 60 g olives, chopped
  • pepper
  • Basil, for garnishing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut off the bean tips and halve the beans. Cook for 5 minutes, drain, and rinse. Set aside. Chop the tomatoes and reserve the juice. Heat the oil, brown the onion and garlic while stirring. Add the sugar and let it caramelize. Pour in the vinegar and cook for 1 minute. Then add the tomato pieces with their juice, the basil, the olives, and the pepper, and cook uncovered for 5 minutes. Add the beans to the sauce and simmer for 10 minutes. Garnish with basil leaves.
