Ingredients for 4 servings:
- 1 bulb(s) garlic
- 1 bunch parsley or coriander
- 1 tsp salt
- 200 ml oil
- 50 ml white wine vinegar
- ½ tsp caraway or cumin
Instructions

Mojo verde, Mojo de perejil (parsley) or Mojo de cilantro (cilantro)
Peel the garlic bulb and roughly chop (you might want to start with 5-6 cloves). Blend the salt, garlic, caraway seeds, and 50 ml of white wine vinegar together with a hand blender. Now add the parsley or coriander leaves. Important: Slowly add the oil while blending continuously (for consistency). Taste and season to taste with more vinegar (if desired).
