Green pea soup with bacon

Ingredients for 4 servings:

  • 500 g peas, dried
  • Salt
  • 125 g bacon, lean
  • 2 onions
  • 1 tbsp flour
  • 2 tbsp vinegar
  • pepper
  • nutmeg
  • 1 pinch of sugar
  • 400 g sausages (Vienna sausages)
  • 3 tbsp sour cream

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Soak the peas overnight in 2 liters of water. The next day, cover with the soaking water and simmer gently for 1.5 hours. Season the peas with salt. Dice the bacon and onions, fry, and mix with flour and a little pea stock. Add the sauce to the peas and let it simmer for another 10 minutes. Heat the sausage slices in the soup. Finally, stir in the sour cream.
