Green potato salad

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 6 eggs, hard-boiled
  • 2 bunch herbs (Frankfurt green herbs)
  • 2 cups of sour cream (150 g each)
  • 150 ml mayonnaise
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 13 hours

Boil the potatoes, peel, and chop them. Wash the herbs, spin them dry, and remove any coarse stems. Puree the herbs with the sour cream and stir in the mayonnaise. Mix the potatoes and sauce, season generously with salt and pepper. Let it sit for a while, preferably overnight. Chop the eggs and add them to the salad. Season again.
