Ingredients for 2 servings:
- 1 lettuce or lamb’s lettuce
- 1 mango(s)
- 1 small onion(s)
- 2 chicken breast fillets
- 1 handful of walnuts
- 200 g feta cheese
- 3 tbsp water
- 3 tbsp olive oil
- 100 g cherry tomatoes
- 1 bag of salad herbs – spice mix
- salt and pepper
- Paprika powder, sweet
- Fat, for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes
Wash and chop the lettuce and place it in a salad bowl. Halve or quarter the cherry tomatoes, depending on your taste. Chop the walnuts and finely dice the onion, and add it to the salad. Peel and dice the mango. Be careful, it has a rather large pit. Dice the feta cheese. Cut the chicken breast fillets into strips and sear them. Season with salt, pepper, and paprika, if desired. Mix the herb mixture with a little olive oil and water and toss the salad. Serve with the chicken breast strips.
