Green spelt and carrot casserole

Ingredients for 4 servings:

  • 120 g green spelt
  • ¼ liter of water
  • ½ tsp salt
  • 200 g quark
  • 300 g carrot(s)
  • 1 onion(s)
  • 1 garlic clove(s)
  • 300 g potatoes
  • 200 g cheese, grated
  • 4 eggs
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Add the green spelt to boiling, salted water, bring to a boil briefly, and then turn off the heat and let it swell for 25-30 minutes. Drain the quark in a sieve. Peel the carrots and potatoes and coarsely grate them. Place them in a mixing bowl with the finely diced onion, crushed garlic, eggs, and drained quark. Wash and finely chop the parsley, and add it to the bowl. Add the swollen green spelt (if the water isn’t completely absorbed, drain it first) to the remaining ingredients. Mix everything thoroughly, season with salt and pepper, and pour into a greased baking dish. Sprinkle with grated cheese and bake for about 50 minutes at 200°C.
