Green spelt bolognaise

Ingredients for 4 servings:

  • 10 g olive oil
  • 100 g onion(s), diced
  • 1 clove(s) garlic, crushed
  • 80 g green spelt, coarsely ground
  • 100 ml red wine
  • 25 g tomato paste
  • 400 g diced tomatoes or small vine tomatoes
  • 2 pinches of freshly ground pepper
  • 1 pinch of oregano
  • 1 pinch of thyme
  • Sea salt, iodized

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Tomato spelt sauce with wholemeal pasta

Sauté the onions and garlic in olive oil. Add the green spelt flour and sauté for 5 minutes. Sauté the tomato paste, deglaze with the red wine, and reduce. Add the diced tomatoes and seasoning. Cover and simmer for 10 minutes, stirring frequently. Season to taste and serve. Serve with whole-wheat pasta and basil-Parmesan (freshly chopped basil mixed with grated Parmesan) and tomato salad with mozzarella and olives.
