Ingredients for 4 servings:
- 80 g green spelt meal
- 500 ml vegetable stock
- 1 carrot(s)
- 4 stalk(s) Celery
- 1 onion(s)
- 800 g tomatoes, chopped
- 2 tbsp tomato paste
- some red wine if needed
- 2 tbsp, chopped basil
- salt and pepper
- some olive oil

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
vegan Bolognese sauce
Roast the green spelt groats in a pan until they turn a little darker. Deglaze with the vegetable stock and bring to a boil briefly. Then remove the pan from the heat and let the green spelt groats swell for about 20 minutes. In the meantime, wash, trim, or peel the vegetables and cut them into the smallest possible cubes. Peel the onion and also dice it finely. Heat a little olive oil in a non-stick pan and roast the vegetables. Add the swollen green spelt groats and fry briefly. Deglaze with the chopped tomatoes and add a little red wine, if desired. Simmer on low heat for about 30 minutes. Then stir in the chopped basil and tomato paste. Finally, season the sauce with salt and pepper. Note: This amount of sauce is sufficient for 500g of spaghetti.
