Green spelt cakes

Ingredients for 4 servings:

  • 250 g green spelt, crushed
  • 1 liter vegetable broth or meat broth
  • 2 rolls
  • 1 egg(s)
  • 2 tbsp onion(s), steamed
  • 2 tbsp parsley, steamed
  • salt and pepper
  • nutmeg
  • breadcrumbs
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the green spelt meal with the broth until it forms a thick porridge. When it starts to pull away from the bottom of the pan, set it aside to swell and cool. Soak two bread rolls, squeeze out the excess water, tear them into pieces, and add them to the green spelt along with the eggs, onions, and parsley. Season with salt, pepper, and nutmeg and mix everything well. Form into cakes, coat in flour, and fry slowly in hot oil. Serve with salad. The cakes also taste good cold.
