Green spelt cheese patties

Ingredients for 4 servings:

  • 300 g green spelt, medium-finely ground
  • ¾ liter vegetable broth
  • 1 tbsp herbs de Provence
  • 2 onions, finely diced
  • 1 egg(s)
  • 50 g flour (wheat flour)
  • 4 tbsp oat flakes
  • 4 tbsp cheese, grated
  • herbal salt
  • breadcrumbs
  • oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the ground spelt to a boil with the vegetable stock and Provençal herbs and let it swell for 20 minutes. Heat a little sunflower oil and sauté the finely chopped onions. Stir the onions, beaten egg, flour, oat flakes (they’ll be even heartier if toasted!), grated cheese, and herb salt into the spelt mixture. Form the mixture into patties, coat in breadcrumbs, and fry for about 5 minutes on each side. Sweetcorn or grated carrots are also delicious in the patty batter!
