Green spelt meatballs

Ingredients for 4 servings:

  • 250 g green spelt
  • ½ liter of water
  • 1 tbsp vegetable stock powder
  • 1 tsp herbal salt
  • 1 tsp mustard, medium hot
  • 1 tsp paprika powder
  • 1 tsp pepper
  • 1 tsp herbs de Provence
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • 1 onion(s)
  • 1 egg(s)
  • 100 g cheese, grated
  • Fat for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Coarsely grind the green spelt, then finely grind some of it. Combine the green spelt, water, all the spices, and the finely diced onion in a non-stick pan. Bring to a boil, then simmer on the stovetop with the lid on for at least 15 minutes. Let the mixture cool. Fold in the egg and grated cheese and form meatballs with wet hands. Fry in the pan until golden brown. The meatballs are also delicious cold. I’ve also baked them in the oven with pineapple and a slice of cheese. It was also delicious.
