Green spelt patties

Ingredients for 4 servings:

  • 200 g green spelt, crushed
  • 100 g carrot(s)
  • 100 g leek
  • 80 g onion(s)
  • 2 eggs
  • 10 g oil
  • 300 ml vegetable stock
  • 1 bunch of parsley
  • Salt and pepper from the mill
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onions and fry in oil until translucent. Add the green spelt meal and pour in the vegetable stock. Let it swell for about 20 minutes. Then stir the eggs into the mixture. Add the grated carrots and chopped leek and mix well. Season with salt, pepper, cayenne pepper, and finely chopped parsley. Form the mixture into twelve equal-sized patties and fry in a pan with a little oil until golden brown on both sides. The patties taste great with garlic mashed potatoes, glazed carrots, or a fresh salad. They’re also great for burgers.
