Green spelt patties with cashew sauce

Ingredients for 2 servings:

  • 150 g green spelt meal
  • 1 onion(s), chopped
  • 250 ml vegetable stock
  • 1 tbsp parsley, chopped
  • 1 tbsp soy flour
  • 200 g cashew nuts
  • 250 ml oat milk (oat drink)
  • salt and pepper
  • Paprika powder
  • 1 carrot(s)
  • 1 spring onion(s)
  • 200 g bulgur
  • 250 ml water
  • 1 pinch(s) of turmeric
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

To make the green spelt patties, lightly fry the green spelt meal with the onions in a little oil. Transfer to a bowl and add the vegetable stock, parsley, and soy flour. Mix the mixture well and form into 8 balls. Fry in a little oil in a pan until browned and crispy. To make the cashew sauce, puree the cashews with the oat milk. Finely chop the carrot and spring onions and bring to a boil with the sauce. Season with salt, pepper, and paprika and simmer until the carrot pieces are tender but still slightly firm to the bite. Simmer the bulgur with water, turmeric, and salt for 10 minutes. Serve the patties with the sauce and bulgur and serve with a green salad with bell peppers and lentil sprouts.
