Green tea ice cream

Ingredients for 6 servings:

  • 500 ml milk
  • 30 g tea, Japanese green tea (powder form – Matcha)
  • 7 egg yolks
  • 230 g sugar
  • 300 ml whipped cream
  • 50 ml milk, mixed into the cream

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Bring the milk to a boil and remove from the heat. Stir the green tea powder into the milk and mix well. In a second bowl, combine the egg yolks with the sugar and stir until smooth. Combine the egg mixture with the milk in a saucepan and heat until just below boiling point. Remove from the heat and cool completely (in ice water). Whip the heavy cream until frothy and stir in, mixing well. Freeze the mixture in an ice cream maker or in the freezer.
