Green tomato chutney

Ingredients for 1 servings:

  • 1 kg tomatoes, green
  • 4 shallots
  • 5 garlic cloves
  • 100 g apricot(s), dried
  • 200 g brown sugar
  • 100 ml white wine vinegar
  • 1 tsp mustard seeds
  • 1 tsp cumin

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 20 minutes; Total time approx. 6 hours 50 minutes

Finely dice the tomatoes and apricots. Place them in a bowl and mix with the sugar, vinegar, mustard seeds, and cumin. Let it steep for at least 6 hours, preferably overnight. Finely dice the shallots and garlic cloves and add them to the mixture in a saucepan. Bring to a boil briefly, then simmer over medium heat for about 20 minutes. Immediately pour into jars while still hot. The chutney is truly delicious after it has steeped for about 2 weeks.
