Pumpkin chutney with apple

Ingredients for 1 servings:

  • 3 tbsp olive oil
  • 1 m.-sized onion(s), very finely chopped
  • 1 chili pepper(s), pitted and finely chopped
  • 2 tbsp, heaped ginger, fresh, chopped
  • 1 tsp, heaped mustard seeds
  • 1 cinnamon stick(s)
  • 1 tsp coriander powder
  • 4 carnations
  • 4 cardamom seeds
  • 1 tsp salt
  • 30 cl white wine vinegar or apple cider vinegar
  • 140 g sugar
  • 500 g pumpkin(s) (butternut or Hokkaido pumpkin), diced
  • 1 apple, peeled, small cubes
  • 50 g raisins

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Sauté the onion in olive oil until translucent, add the pumpkin, and cook for 5 minutes. Add all the spices and stir in. Sprinkle with sugar and pour in the vinegar. Stir everything together and cook over medium heat. After 15 minutes, add the apple and raisins and cook for another 15 minutes. Mix the chutney thoroughly and pour it into hot jars. This quantity makes two 33 cl jars.
