Ingredients for 1 servings:

  • 6 eggs
  • 1 tbsp vanilla sugar
  • 250 g sugar
  • 250 g flour
  • 1 tsp baking powder
  • 3 cups of cream
  • 1 sachet of cream powder (Paradise Cream Vanilla)
  • n. B. Brittle
  • e.g. chocolate sprinkles
  • n. B. fruits, e.g. banana and tangerine
  • 2 packs of cake icing (chocolate icing) to taste
  • 1 pack of biscuits, round or wafer

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Separate the eggs. Beat the egg whites until stiff peaks form, then add the sugar and vanilla sugar, and continue beating until the mixture is glossy. This will take about 10 minutes. Set the mixer to the lowest speed and beat the egg yolks, one at a time, into the beaten egg whites. Mix the flour with the baking powder and fold in. Spread the batter onto a baking sheet lined with baking paper and bake in the oven at 200°C (top/bottom heat) until golden brown. Crumble the cooled batter into a large bowl. Add the brittle and chocolate sprinkles and mix. Whip the cream until stiff peaks form, then continue beating with the Paradise Cream until stiff peaks form. Add the cream to the crumbles and mix thoroughly. Chop the fruit and fold in. Spoon the mixture onto the cookies, forming each into a mountain. Chill to set. In the meantime, prepare the glaze according to the package instructions and drizzle over the mountains. You can also marble it with white glaze; it looks beautiful.
