very fine Christmas cookies, makes about 60 pieces
Sift flour and cornstarch onto a work surface, make a well in the middle, and sprinkle salt, cardamom, sugar, and ground walnuts around the edge. Place pieces of butter around the edge. Add the rum and egg to the well. Knead everything into a smooth dough and chill for 30 minutes. Roll out the dough thinly and cut out shapes. Bake on a baking sheet lined with baking paper in a preheated oven at 200°C (top/bottom heat) for 8-10 minutes. Allow the cookies to cool. Mix the powdered sugar and rum to make a glaze. Glaze half of the cookies and place a walnut half on top. Spread the other half with jam and place one glazed cookie on top of the jam-covered cookie.
