Grilled chicken breast with basil and mozzarella

Ingredients for 2 servings:

  • 2 large chicken breasts
  • salt and pepper
  • 8 basil leaves
  • ½ ball of mozzarella
  • ½ lemon(s)
  • 5 tbsp oil (corn oil)
  • 2 garlic cloves

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Cut a pocket into the chicken breasts and season it lightly with salt and pepper. Fill it with basil leaves and slices of mozzarella and seal the pocket with toothpicks. Crush the garlic. Mix with the grated zest and juice of half a lemon and the oil. Season generously with salt and pepper. Place the chicken breasts in this marinade and marinate for about 3 hours, turning frequently. Grill on the charcoal grill for about 20 minutes, brushing them frequently with the marinade. I first place the chicken breasts on aluminum foil and then directly on the grill about 5 minutes before the end of the cooking time. I use a meat thermometer. At an internal temperature of 70°C, the chicken breasts are tender and juicy.
