Grilled feta tomato parcels

Ingredients for 1 servings:

  • 200 g sheep’s cheese, up to 250 g
  • 2 beef tomatoes or equivalent amount of cherry tomatoes
  • 10 basil leaves
  • olive oil
  • 1 clove(s) garlic
  • 1 half onion(s)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Slice the feta cheese and tomatoes. Tear each basil leaf open; I think this allows the flavor to develop better. Slice the onion into thin rings. Layer the onions vertically, i.e. lengthwise, in an aluminum grill tray (always cheese, onion, tomato, and basil) or double up a sheet of aluminum foil and serve on top. Crush the garlic over the top, season with salt and pepper, and drizzle with olive oil. Wrap the tray in aluminum foil, at least twice, as otherwise the oil might drip into the grill. Place on the grill and grill for about 10 minutes on each side, until the cheese has melted. It also tastes delicious with mozzarella and is a good alternative for vegetarians.
