Ingredients for 4 servings:
- 4 squid tube(s)
- 300 g feta cheese
- ½ bell pepper(s)
- 16 green olives
- ½ onion(s)
- 1 garlic clove(s)
- olive oil
- oregano
- salt and pepper
- herb butter
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes
with feta, peppers and olives
Wash the squid tubes and dry them with kitchen towels. Cut the feta into small pieces and place them in a small bowl. Cut the bell pepper, onion, olives, and 1/2 garlic clove into small pieces and add them to the bowl. Add a little salt, a little pepper, a little oregano, and a little olive oil, and mix everything well with a spoon. Spoon the mixture into the squid tubes and seal them with skewers, toothpicks, or something similar. Finely chop the remaining half garlic clove and rub it with salt on a board. Transfer to a salad bowl, then add the olive oil, pepper, and oregano. Mix everything together and brush the filled squid tubes with the mixture using a pastry brush. Let everything sit for about 30 minutes (this is not necessary). Then cook the squid tubes on a grill (or in a pan if you don’t have one) on both sides until the tubes are lightly browned and swell. After grilling, serve the finished squid tubes with herb butter on top. They taste best with Greek salad and are low in carbohydrates.
