Ingredients for 1 servings:
- 2 eggs
- 120 g low-fat curd cheese
- 130 g cheese, grated, light
- 100 g crème fraîche, alternatively crème lègére
- 1 bunch of spring onions
- 50 g diced ham
- e.g. salt and pepper
- 1 tbsp herbs or crème fraîche with herbs

can also be used as dough for low carb pizza etc.
For the base, mix the low-fat quark with the eggs and 80g of cheese and stir until smooth. Season with salt and pepper. Pour the fairly runny mixture onto a baking sheet lined with baking paper and spread evenly. One portion is enough for about one baking sheet, but this can vary slightly depending on the size of the oven. However, as is usual with a tarte flambée, the mixture can be spread quite thinly. Bake in a preheated oven at 175°C (top/bottom heat) or 160°C (fan oven) for about 15 minutes on the middle rack, until it turns a light golden brown. Do not overbake, as the dough will need to be returned to the oven after topping. If small bubbles form, simply prick them with a fork to ensure the base remains nice and smooth. Once the desired browning is achieved, remove the dough from the oven and let it cool for about 5 minutes. Tip: I also briefly remove the base from the baking paper during this time, as experience has shown it is easier to handle later. Spread the dough with crème fraîche. If you like, you can season it with salt and pepper. Sprinkle with sliced spring onions, diced ham, and the remaining 50g of cheese. Return to the oven on the middle rack for about 15 minutes, until the cheese has melted and is lightly browned. If you like, you can eat it as a low-carb tarte flambée or let the flambée cool briefly, then carefully roll it up using the baking paper and cut it into bite-sized pieces. Depending on the ingredients used, the rolls only have around 6g of carbohydrates. Of course, you can also top tarte flambée or rolls with whatever you like. The version with salmon, for example, tastes really great.
