Groninger Mustard Soup

The perfect groninger mustard soup recipe with a picture and simple step-by-step instructions.

  • 50 g Butter
  • 60 g Flour
  • 1 liter Chicken broth
  • 3 tablespoon Groninger soup
  • 125 Milliliters Cream
  • 300 g Bacon
  • 1 piece Leek
  1. Melt the butter in a large saucepan, but do not let it turn brown. Add the flour and prepare a roux.
  2. Add the chicken stock, stir everything until smooth and cook for 4 minutes. Add the mustard and cook over low heat for 5 minutes so that it thickens. Then add the cream and stir well.
  3. Cut the bacon into thin ribs and fry until crispy. Then drain on kitchen paper.
  4. Wash the leek and cut into small strips (approx. 2 mm wide). Add strips of bacon and leek (hold a little to the side to garnish).
