Groninger Mustard Soup
The perfect groninger mustard soup recipe with a picture and simple step-by-step instructions.
- 50 g Butter
- 60 g Flour
- 1 liter Chicken broth
- 3 tablespoon Groninger soup
- 125 Milliliters Cream
- 300 g Bacon
- 1 piece Leek
- Melt the butter in a large saucepan, but do not let it turn brown. Add the flour and prepare a roux.
- Add the chicken stock, stir everything until smooth and cook for 4 minutes. Add the mustard and cook over low heat for 5 minutes so that it thickens. Then add the cream and stir well.
- Cut the bacon into thin ribs and fry until crispy. Then drain on kitchen paper.
- Wash the leek and cut into small strips (approx. 2 mm wide). Add strips of bacon and leek (hold a little to the side to garnish).
