Ingredients for 4 servings:

  • 180 g basmati rice
  • 1 avocado(s), ripe
  • 6 small tomatoes
  • 1 garlic clove(s)
  • salt and pepper
  • 1 tbsp parsley, fresh or frozen

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

super delicious, vegan side dish

Cut the avocado into small pieces and quarter the small tomatoes. Prepare the basmati rice in a small pot according to the package instructions. Drain and return it to the pot. Add the avocado to the rice, mash it with a fork, and mix it with the rice. Crush the garlic clove and add it to the pot along with the parsley, mixing everything well. Then stir in the tomato quarters and season with salt and pepper.
