Ingredients for 1 servings:
- 2 lemons
- 300 g margarine
- 250 g sugar, or 50/50 with Xucker
- 1 ½ tsp vanilla sugar
- 5 eggs
- 300 g flour
- 3 tsp baking powder
- ½ tsp salt
- 30 g poppy seeds
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Mix the butter, sugar, and vanilla sugar until smooth. Then add the eggs, one at a time. Combine the flour with the baking powder and sift it with the salt. Fold in the butter, sugar, and egg mixture. Finally, fold in the poppy seeds and grated lemon zest, along with the juice of just one lemon. Fill into 12 muffin tins and bake at 180°C (350°F) for 20-25 minutes, until the muffins are golden brown. Use your oven’s experience! Test with a toothpick. Tips: If you don’t like it too sweet, you can also mix the sugar 50/50 with Xucker. And if you don’t have any lemons on hand, you can also use ready-made lemon zest and lemon syrup.
