Gyro rice one-pot

Ingredients for 4 servings:

  • 200 g basmati rice
  • 800 g chicken breast fillet(s)
  • Gyro seasoning or pizza seasoning, as desired
  • 2 medium-sized red bell peppers, approx. 150 g each
  • 1 m.-sized onion(s)
  • salt and pepper
  • Paprika powder, sweet
  • 500 ml vegetable stock
  • 200 ml cooking cream, 7% fat
  • 2 garlic cloves
  • e.g. feta cheese, optional
  • 200g tzatziki

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat oven to 200°C (top/bottom heat). Place raw rice in a casserole dish (alternatively, divide it between 4 ovenproof bowls, each 600 ml). Roughly dice the bell peppers and finely dice the onions, then spread them over the rice. Season with salt, pepper, and paprika. Cut the chicken breast into strips and season with spices of your choice (Mediterranean, Greek). Spread evenly over the vegetables. Combine the broth and cream, press in the garlic, and pour the mixture evenly over everything. If desired, add some feta cheese. Bake in the oven for 35-40 minutes. Top with tzatziki before serving. Nutritional values: 547 kcal with 57 g protein, 51 g carbohydrates, 12 g fat.
