Gyros made from pork fillet with tzatziki and tomato salad

Ingredients for 2 servings:

  • 500 g pork fillet(s)
  • 600 g cherry tomatoes or other tasty tomatoes
  • 2 red chili peppers
  • e.g. Tzatziki
  • 1 onion(s)
  • Salt
  • pepper
  • oil
  • Balsamic vinegar, white
  • 4 tsp oregano, dried
  • 2 tsp thyme, dried
  • 2 tsp paprika powder, hot
  • 1 tsp cumin
  • 1 tsp onion powder
  • 2 tsp basil, dried
  • 1 tsp rosemary, dried
  • 1 tsp coriander powder
  • 1 tsp chili powder

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 40 minutes

Combine all the ingredients for the gyro seasoning. Clean the pork fillet, cut into small, bite-sized pieces, and spray with oil. Sprinkle generously with gyro seasoning and let it marinate overnight in the refrigerator. Cut the tomatoes in half, or quarter them if they’re large. Mix with salt, pepper, and a little oil and vinegar. Fry the pork fillet in a pan with the chopped onion and the halved chili peppers in a little oil until crispy. Serve everything on plates with tzatziki.
