Ingredients for 8 servings:
- 400 g herring fillet(s), Frisian style, diced
- 150 g gherkins, diced and patted dry with kitchen paper
- 2 small apples, sour, diced
- 150 g pearl onions, finely diced and patted dry with kitchen paper
- 3 m.-large shallot(s), finely diced
- 6 large eggs, hard-boiled and diced
- 1 bunch dill, chopped
- some mayonnaise to bind the ingredients
- Salt and pepper, white, finely ground
- Paprika powder, sweet

As I already wrote in the list of ingredients, it’s very important, if only for the visual appeal, to chop the ingredients into small pieces. Combine the first six ingredients in a medium-sized bowl and sprinkle with freshly chopped dill. Stir the ingredients together and add the three seasonings to your liking. Once the salad is seasoned to your liking, thicken it with a little mayonnaise until it forms a smooth, homogenous mixture. Before serving, refrigerate the Häckerle for about two hours. This allows the flavors of the ingredients to disperse evenly. Serve with rich bread rolls, sandwiches, or baguette.
