Ingredients for 1 servings:
- 1 pack of halloumi, 200 – 250 g each
- ½ bowl of brown mushrooms, max. 100 g
- 1 red bell pepper(s)
- little garlic
- 2 tbsp olive oil, good
- 1 pinch(s) of oregano
- 1 pinch(s) of salt and pepper
- Spice(s) of your choice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Preheat the oven to 220°C. Divide the halloumi in half and slice. Slice the red bell pepper so it can be layered vertically with the halloumi. Slice the mushrooms. Then layer everything vertically in a small single-person baking dish (halloumi, mushrooms, bell peppers), alternating between the layers. Chop the garlic and scatter it between the layers. Season everything with salt, pepper, and oregano (on top). Drizzle with olive oil. Tip: Don’t buy grilled cheese or grilled halloumi, or just buy feta cheese instead of halloumi. That works, but it just doesn’t taste as good. You can, of course, pimp up the dish with spices or other ingredients to suit your taste (swap the bell peppers for zucchini, etc.). Mushrooms are generally good, though, as they release some water, which helps the dish cook thoroughly in the oven. It’s best eaten straight from the dish.
