Ingredients for 4 servings:

  • 4 orange(s), untreated
  • 1 fennel
  • 1 small onion(s)
  • 1 dash of olive oil
  • some olives, black, pitted and sliced
  • small bunch of parsley
  • Orange zest from an orange

Instructions

Peel all the oranges. It’s best to use a sharp knife to remove the peel, making sure to also remove the white pith. Then slice the oranges and collect the resulting juice. Place the orange slices in a bowl, then add the orange juice and the zest of one orange. Slice the onion and fennel into very fine strips or rings and add to the oranges. Then add a dash of olive oil and mix everything well. Finally, garnish the salad with parsley and olive slices. You’ve got a wonderfully refreshing summer salad that also goes very well with grilled food!
