Halloumi casserole

Ingredients for 3 servings:

  • 750g halloumi
  • 2 onions
  • 2 cloves garlic
  • 50 g ginger
  • 1 pinch(s) of sugar
  • 100 g yogurt
  • 500 g tomatoes, pureed
  • 5 tbsp tomato paste
  • Garam Masala
  • 30 g butter
  • 200 g rice

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Jana’s delicious secret recipe

Preheat the oven to 180°C. Peel the onions, garlic, and ginger and chop them into small pieces. Fry everything together in a pan until translucent, then add a pinch of sugar and let it caramelize slightly. Remove the pan from the heat. Now cut the halloumi into cubes of approximately 1 x 1 cm and place in a baking dish. Add the contents of the pan, the yogurt, the passata, and the tomato paste, and mix everything well. Season to taste with masala and other spices, and mix everything well again. Spread the butter in small pieces over the casserole and place everything in the oven at 180°C for about 20-25 minutes. Nothing needs to be cooked through; just make sure everything is warm. While the casserole is in the oven, cook the rice as usual. Alternatively, you can serve it with naan bread.
