Halloween: Smashing Pumkins Soup

  • 1 small Hokkaido pumpkin
  • 1 Red onion
  • 1 Half liter Orange juice
  • 1 Half liter Vegeta broth
  • 2 el Apricot jam
  • 2 tl Erotic pista
  • 3 slices Peeled ginger cut into small pieces
  • 3 slices Olive oil
  • Sweet cream
  • Spices:
  • Salt, brown sugar
  • Cayenne
  • Chilli flakes
  • For topping:
  • Styrian pumpkin seed oil
  • Pumpkin seeds
  1. Divide the pumpkin with the knife and scoop out the seeds with a spoon
  2. then cut the pumpkin into small pieces
  3. Peel and chop the red onion
  4. Heat the olive oil in the pot and then sweat the onion in it, and shortly afterwards the pumpkin cubes
  5. Deglaze with the vegetable stock and orange juice, simmer
  6. Add the pista and the apricot jam
  7. Let everything simmer until soft
  8. season with the spices
  9. then puree with the magic wand
  10. add the sweet cream and froth up again with the magic wand
  11. Fill soup into plates or soup bowls
  12. and now top with the pumpkin seed oil and seeds
  13. Serve with some baguette
