Ingredients for 1 servings:
- 1 roll, Röggelchen (crispy rye roll)
- 2 slice(s) cheese, (Gouda) at least finger thick
- 8 thin spring onions
- Mustard, milder
- butter

Cut the rolls in half. Spread each half with butter (NOT margarine!), if desired. Place a thick slice of cheese on each buttered roll half and spread with mustard. Then add the finely chopped spring onions and serve. The basic Cologne recipe uses regular onions instead of spring onions, and hot mustard instead of mild mustard. Otherwise, it’s the same. The flavor of the spring onions and mild mustard is good for beginners and also easier on the stomach.
