Ham and cheese quiche

Ingredients for 4 servings:

  • 125 g flour
  • 80 g butter
  • 1 tsp baking powder
  • 100 g raw ham
  • 100 g cooked ham
  • 3 eggs
  • ½ cup sour cream or crème fraîche
  • 250 g Emmental cheese, grated
  • Salt
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Make a shortcrust pastry from flour, one egg, salt, butter, and baking powder. Refrigerate for half an hour, then roll it out and place it in a greased springform pan. Alternatively, you can buy the pastry ready-made. Slice the ham and spread it on the pastry. Whisk the remaining eggs, add the sour cream and Emmental cheese, and mix. Season with salt and paprika. Pour the cheese mixture over the ham. Bake the quiche at 175°C – 200°C for about 25 – 35 minutes. If you like, you can also add tomatoes on top.
