Ingredients for 1 servings:
- 500 g flour
- 175 g margarine
- 60 g sugar
- 3 m.-sized eggs
- 500 ml milk
- 1 lemon(s), organic, grated peel
- 1 cube of yeast
- 125 g raisins
- 125 g butter flakes
- 100 g almond flakes
- 200 g powdered sugar
- 3 tbsp lemon juice
Instructions
Working time approx. 25 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 27 minutes
Mix the flour, margarine, sugar, eggs, milk, lemon zest, crumbled yeast, and raisins. Knead until smooth, then cover and let rise in a warm place for about 30 minutes. Knead the dough again and roll it out on a baking sheet lined with baking paper. Let it rise for another 20 minutes. Cover the dough evenly with butter flakes and flaked almonds. Bake in a preheated oven at 225°C (fan oven: 205°C and gas mark 5) for about 10-12 minutes until golden brown. In the meantime, mix the icing sugar with the lemon juice until smooth. Spread the lemon glaze over the still-warm cake.
