Hamburger & cheeseburger sauce based on cucumber relish

Ingredients for 1 servings:

  • 1 cup gherkins, finely diced
  • 1 m.-sized onion(s)
  • 1 cup cucumber water
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ tsp pepper, mixed, freshly ground
  • 4 tbsp apple cider vinegar
  • 2 dashes of Tabasco
  • 1 tsp, heaped mustard, medium hot
  • ½ tsp, leveled curry powder
  • 1 tbsp ketchup
  • e.g. mayonnaise

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

First, make a cucumber relish from one cup of finely diced gherkins and one medium-sized onion, also finely diced. Bring one cup of cucumber water to a boil with the diced onions, gherkins, and a good tablespoon of sugar. Stir in salt and mixed pepper. Add 3-4 tablespoons of apple cider vinegar. Stir in curry powder, Tabasco, and mustard. Simmer until almost all the liquid remains; this takes a good 15 minutes. Then let it cool and mix the relish with the mayonnaise and ketchup in a 2:3 ratio (by volume). Let it sit for at least one hour, preferably overnight. If desired, you can add extra dill. A variation would be to replace the mustard and curry powder with ground mustard seeds, turmeric powder, and ginger. The relish can be poured into small, sterile jars while it is still hot before mixing it with the mayonnaise and then stored in the refrigerator for a longer period. This quantity is enough for about 5-8 burgers.
