Puff pastry muffins with cheese filling

Ingredients for 12 servings:

  • 1 package of puff pastry, 375 g, from the refrigerated section
  • 2 eggs
  • 1 bag of herbs, frozen
  • salt and pepper
  • 200 g cream cheese
  • 200 g Emmental cheese, grated
  • 6 slices of smoked cheese
  • 50 g Edam cheese, grated
  • some paprika powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Line a muffin tin with paper baking cups. Cut the puff pastry into 12 equal pieces and place them in the paper baking cups, leaving the edges intact. Quarter the smoked cheese and place two-quarters of a slice in each muffin cup. Whisk the eggs with salt and pepper, the cream cheese, the herbs, and the grated cheese. Spread the cheese filling evenly over the puff pastry. Press the edges of the puff pastry together to create “closed” muffins. Sprinkle with a little grated cheese. Bake in a preheated oven at 190°C (375°F) for about 20 minutes. The muffins taste best warm, but are also delicious cold.
