Ingredients for 10 servings:

  • 1 kg anchovies
  • 3 tbsp flour
  • 3 eggs
  • salt and pepper
  • oil
  • 2 lemons, juice
  • n. B. Onion(s), cut into rings
  • Msp. herbs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Fried anchovies

Remove the heads and entrails of the anchovies, wash the fish thoroughly, and pat dry with kitchen paper. Whisk the eggs with flour, salt, and pepper. Heat oil in a large pan. Lift 2-4 anchovies at a time by their tail fins, dip them in the egg-flour mixture, and fry in the pan for 2-3 minutes on each side over medium heat until golden brown. Place the fried anchovies on a serving plate and drizzle with lemon juice and garnish with onion rings or herbs.
