Hand Kettle Salad with Beef and Apples

  • 500 g Boiled beef
  • 1 piece Soup greens fresh
  • 3 piece Bay leaves
  • 4 piece Cloves
  • 500 g Hand cheese
  • 4 piece Red onions
  • 1 piece Apples
  • 1 bunch Radish
  • 1 shot Calvados
  • 1 shot Walnut vinegar
  • 1 shot Cider
  • 1 shot Lemon oil
  • Grated lemon peel
  • Salt and pepper
  • Beef broth
  • Curry powder
  • Sugar

  1. Mix the ingredients together and season to taste.

  1. Let the beef with the vegetables and spices simmer for about 1.5 to 2 hours. The meat is done if you prick it with a fork and simply slide it down. Then let the meat cool down completely and cut into small cubes (approx. 1 cm in size). Let the hand cheese marinate in the marinade for about 6-7 hours or overnight in the refrigerator, then cut into cubes. Put the red onions in the same marinade the day before. (Not together with the hand cheese!) Then peel and chop the apples and then pour apple cider and a little calvados over them. Add a pinch of cinnamon and sugar and let it steep for about 1 hour. Clean and chop the radishes. Mix everything carefully just before serving.
