Handkäse ice cream with fig mustard

Ingredients for 4 servings:

  • 400 g cream
  • 100 ml milk
  • 1 whole egg
  • 4 egg yolks
  • 120 g sugar
  • 40 g Harzer cheese (Harzer Roller), without caraway, diced
  • 2 tbsp fig mustard

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Ice cream with Harzer Roller

Combine all ingredients except the fig mustard in a mixing bowl and whisk over a pan of simmering water until creamy. Strain into a rose shape. Then chill in ice water. Make ice cream in an ice cream maker. Whisk the fig mustard with a little water until smooth and serve separately with the ice cream.
